Activities for Wednesday, December 8, 2004 (self-guided)

Visit the Museum of Western Colorado, a short walk from the hotels.
Numerous restaurants and shops also are within walking distance of the hotels.

The following activities will require transportation.

* Learn about the dinosaurs that roamed Western Colorado
* Journey through the Colorado National Monument and the Grand Mesa National Forest - two amazing natural wonders.
* Golfing in December (weather permitting) - 5 beautiful courses, with fees ranging from $17- $50 for 18 holes.

Activity #1

A Culinary Class: Building Flavor with Onions and Garlic Chef Wayne Smith, UTEC Culinary Arts
Description: This course will explore the role of onions and garlic in the professional kitchen through discussion, cooking demonstrations and tastings. Discussion topics will include onion quality factors for foodservice, trends in dining, and preparation methods. Cooking demonstrations will focus on cooking onions and garlic using a variety of methods and common flavor combinations including the use of shallots in sauce work, onions sauteed with bacon as a flavor base, the Spanish sofrito (onions and garlic sauteed with peppers in olive oil), roasted garlic, and crisp-fried onions. Tastings will include quiche Lorraine, saffron-tomato soup with roasted garlic crouton, and pan-seared sea bass with Port wine sauce and crisp onion straws. Recipes and lecture notes will be provided to all attendees.
Transportation to and from the UTEC facility will be by limousine.

Activity #2

A Tour of the Colorado National Monument - bring your camera for this tour. Stops will be made along the way.
Established May 24, 1911, on 20,453.93 acres, the Colorado National Monument consists of towering red sandstone monoliths, deep, sheer-walled canyons, and a variety of wildlife (bighorn sheep, golden eagles, mule deer and mountain lions). This limousine chauffeured tour will meander through orchard county and stop at Two Rivers Winery on the way back for a taste of Western Colorado Wine.

Limos leave the hotels at 8:30 A.M.; return ~ 12:30 P.M.
Cost - $35

Activity #3

A Tour of the Wine Country with stops at selected wineries.
The limousines will leave the hotels at 11 A.M.; Limos will return to the hotels at 3 P.M.
A box lunch (turkey or roast beef croissant sandwich) will be provided. Wine tasting will occur at each stop. A discussion of the wine making process will be given by one of the vintners. To learn more about Western Colorado's Wine Country check out the web site at http://www.coloradowine.com/

Activity #4

Attend the Culinary Class in the morning and tour Colorado's Wine Country in the afternoon.
