Chicory is a simple perennial which reproduces only be seed. Introduced
from Europe, Chicory has bright, blue, purple, or sometimes white flowers
that occur along the stems of the plant. Basal leaves are fleshy and
tufted and resemble dandelion leaves.
Chicory is grown as a hay crop in Europe. The roots are dried and used
as a substitute for coffee although it is somewhat bitter and is caffeine-free.
Chicory may cause dermatitis in humans.
Chicory is scattered throughout Colorado between 4,000 to 7,000 feet
in elevation.
